easing into the week
Happy Monday, friends! This morning started out with a nice, sweaty cardio session. I am loving starting my week this way, allowing myself to really "wake up" and ease into the week ahead.
I was in the mood for simple egg whites with salt, pepper, and ketchup after my workout, so that was exactly what I had.
I showered up, stopped to grab a few things for school, and headed in to get a couple of things done while no one was around. I spent way too long standing at the copier getting giant packets of stuff ready for the year. Carrying all of this back to my classroom in one trip was quite the risky feat, but I made it, guys! And now I won't have to be a copy machine hog, or worry about it breaking on me from beginning-of-the-year overuse!
After I finished organizing those stacks of paper, I headed to Nourish to do a little nutrition client work and, well, nourish my body! I got an energy bite and a cold brew as my appetizer like usual, and then the Rainbow Bowl, which has mixed greens, sprouted beans, shredded carrots, cucumbers, fermented beets, and avocado. I also sampled this amazing smoothie and now I need to go get one asap.
I headed home and finished up the rest of my work. Every Tuesday, I send out a "Tuesday Tip" newsletter to my nutrition clients, so I worked on getting that finalized and scheduled to be sent out in the morning! I had an open faced peanut butter and banana sandwich as a snack and lots and lots of water.
For dinner tonight, we made tacos! I think taco night was always my favorite growing up, and making them in a super healthy way now allows that tradition to continue. I use 93% lean ground beef and add taco seasoning that I buy at BJs in bulk. Usually, I just have it as a salad on top of a gigantic bowl of greens, but tonight I wasn't super hungry, so I had it on this delicious and super macro friendly wrap with some spring mix. These wraps are thin and sticky- perfect for tacos or burritos!
