grit + grace
Hello! I did a thing today and got a little more ink with some pretty special words I have been wanting to get on me. Grit + Grace. Why? Because that is what I am made of.
I was in the mood for a cold post lifting meal again today, so I made another pretty bowl of protein and carbs. By the way, do you want to know how many times I type CRABS instead of CARBS between client emails, responding to comments, and this blog??? Lots. I see the word crabs and cringe every single time. Anyways, I got this bag of frozen cherries, strawberries, blueberries, and kale so I blended a cup of that with a cup of unsweetened almond milk, a cup of water, a scoop of protein powder, and a little bit of crushed ice and a pinch of xanthan gum. The xanthan gum just helps keep it all together and creamy, rather than icy at the bottom and liquid at the top.
I did some work and errands and had a roasted turkey and spinach sandwich on a pita afterwards. Yesterday, I saw my teacher friend at BJs, today I saw her again at Christmas Tree Shoppe before the rest of the mall opened! I was just like, "We are the same." Vacation is THE BEST by the way :) #lifeofateacher
This is the fastest and easiest way to get your protein and carbs in, people. Organic PB Blasts cereal (they are like Kix), unsweetened almond milk, fresh strawberries, and just a little snickerdoodle protein powder because I didn't need a ton of protein.
I had another quick snack while I worked later on: peanut butter and jelly on a half of a bagel.
I finally gave Ruby a bath after about six months of not! She acts like a statue and pretends to hate it, but when it's all over, she begs to be dried off with the towel for a long time. Then she sprints around like she has a rocket up her you know what! It's pretty hilarious and exhausting for her!
For dinner we had chicken again. We never have chicken this many nights in a row (I think it's been 3), but I had it thawed and wanted to use it up. Plus, grilling it made it different and extra tasty the past two nights. Tonight, I baked it, and now I am good with chicken for a couple days. I also roasted broccoli and I just spray Pam on it and put a little garlic salt and pepper on it while it bakes. We had a chopped tomato and cucumber salad on the side, too. I am so weird about tomatoes, but lately I have been loving them- especially these because they are literally perfectly ripe and have just the right texture for me.
It's been thunder storming on and off all day, which has been kind of relaxing to me. Now I'm off to relax some more with my husband! Have a great rest of your night!
