Happy Monday! 

I am so beyond happy that summer vacation is officially here for me. The second half of last week turned into the worst ever, but yesterday, things got a whole lot better when Mike took me to the sea.

We came home and made some really delicious grilled BBQ rubbed chicken and a spinach, kale, green pepper, and cucumber salad. I had leftover cauliflower rice with marinara sauce on the side too! I also found these huge Diet Del's Lemonade bottles at the store on the way home, so they have made my week already!

It was pretty wonderful to not set my alarm for 4:30am, and instead we woke up naturally at about 5:20am. Mike and I had our coffee, got ready, and then headed out to the garage to lift. Bo headed out to chew his bone and bark at whatever looked interesting.

I wasn't in the mood for eggs after lifting, so I made a smoothie bowl with 1c unsweetened almond milk, 1c water, 1 scoop (24g protein) snickerdoodle protein, 140g of frozen blueberries, 1/4c crushed ice, and 1/4 tsp Xanthan gum. It was delicious and beautiful. You could add whatever toppings you want to hit your macros, but this was perfect for me after training. 

I headed out to BJs and the regular grocery store to stock up on all the staples!

For lunch, I WAS in the mood for eggs, so I cooked up some summer squash and zucchini with garlic salt and pepper, and folded it in an egg white omelette. I had tomatoes and a Joseph's pita with light canola oil butter and cinnamon on the side. 

Then, I did a bunch of work for bar + plates and it just felt good to have some solid, focused, time to work!

For my second lunch, I had another pita with strawberries and sugar free syrup. I had roasted turkey breast deli meat with mustard a little while after because I needed the protein and my body knew it. 

For dinner, we grilled buffalo rubbed chicken and had spinach and roasted asparagus with it. So good and simple and delicious and perfect.

I just had a post-dinner peanut butter treat and now it's time to relax! It was an an excellent and productive first day of vacation for me, so I'm pretty happy about that!
