Happy Sunday guys!! If you follow me on Instagram, you saw my new (favorite) shirt today! I absolutely love it, and then when the coffee shop guy said "healthy, strong, focused... Ya that's definitely YOU!!" I loved it even more. And then a guy at BJs told me I was definitely healthy and strong, and asked me where he could find an "unhealthy and weak tee shirt". I told him we don't want any of that!! 

Here are some pictures I took of some food this past week. The top left is a breakfast/post workout meal and it was cinnamon raisin Ezekiel bread with turkey meat and slices of a honey crisp apple (I ended up dipping it in honey mustard and it was SO good) . The top right is just muffin tin egg whites (I'll show you how I make them below!), a mixture of greens and honey mustard, which I have been having for my two meals at school lately! The bottom left is a dinner of zuchinni noodles, asparagus, and a turkey meatball. Bottom right is another dinner of summer squash and zuchinni noodles with shrimp that were sautéed in Frank's Red Hot!

Here is today's post-training meal of whole wheat waffles (Big Y brand), sugar free syrup, green peppers, and muffin tin egg whites.

Here is how I make my muffin tin egg whites! I personally like these better than scrambled egg whites because they taste like a fried hard boiled egg (minus the yolk), which I love. They are good hot or cold and just more dense, which I guess is what I like. Plus, they're so easy to make!  

I spray the muffin tin with the best pan spray ever. It's like real olive oil, yet has nothing in it... It's magic. But it gives the eggs the fried egg crispyness and taste somehow! Then I pour the entire egg white carton into the muffin tin evenly and bake it on 375 degrees for 10 minutes.

This is how they look when they're done and I just use a fork to pull them out! Each one has about 4g of protein, so I just take however many I need for the meal I'm eating.

These would also be so good in between a mini bagel or on a Joseph's pita, but they're awesome and refreshing cold, on a mixed greens salad too.

This rainy weekend was filled with lots of catching up because we have been crazy crazy busy lately!! Mike worked yesterday morning, which gave me some time to get some stuff done while our home was being inspected!!!! I haven't said much about it because I don't want to jinx anything, but I'm real excited to move very very soon!!! I was also excited yesterday to have nice, clean hair for once ;)

Every night this week was filled with organizing, cleaning, and packing, and Bo has no clue what's going on, and he will not let us out of sight!

Today, we got all the boxes from my friend, and things got real! They also got pretty overwhelming fast hahah! I filled one box so far with things I want to keep from the basement, and everything else is going in a dumpster! If I haven't used it, looked at it, looked FOR it, sold it, or cared about it in 1-6 years... it's not moving with me! I am very good at letting things go...

And now, I will leave you with this little message that I found the other day and love so much. If any of my 40 Days Yoga friends are reading, I know you'll appreciate this. But for everyone else, if there is something about your life that you want to change, you have to do the work. And it is HARD WORK. And you will have to work at it every single day, and keep at it, and work throughso many hard and uncomfortable things, but it is worth it, and you are worth it, and the days are going to pass by anyways...
